Tremella (Tremella fuciformis), also called snow fungus, is a gelatinous white mushroom used for more than a thousand years in East Asian medicine and cuisine, traditionally linked to skin, moisture and vitality. Its research interest centres on its polysaccharides, which hold water strongly and are studied for antioxidant and immune activity. Human evidence is still limited.

What is tremella?

Tremella is a translucent, jelly-like mushroom known as snow fungus, silver ear or white jelly mushroom. It has a mild taste and a distinctive gelatinous texture, and it takes on the flavour of whatever it is cooked with, which is why it has been both a food and a remedy for centuries.

Among functional mushrooms it is the one most associated with skin and hydration, a reputation that comes from its unusually water-binding polysaccharides.

 

A short history of tremella

Tremella has been used in Traditional Chinese Medicine for over a thousand years. Classical texts describe it as a tonic for the lungs and for skin moisture, and in TCM terms it is said to "moisten dryness" and "nourish yin," which is why it was traditionally used for dry coughs, fatigue and dry skin.

It was also a culinary delicacy. Snow fungus soup, often made with goji berries, lotus seeds or jujube, was prized in imperial cuisine. Its most famous association is with beauty: Chinese noblewomen reportedly ate it to maintain youthful skin, and the Tang Dynasty consort Yang Guifei, celebrated for her beauty, is said to have consumed it. That reputation carried into Japan, where it is known as shiro kikurage, and across Southeast Asia. It is a piece of cultural history, and it is the reason tremella still appears in beauty products today.

 

The compounds researchers focus on

Tremella's research interest comes down mostly to one remarkable class of molecule.

Tremella polysaccharides

These acidic heteropolysaccharides are the most studied part of the mushroom. Their standout physical property is water binding: in laboratory tests, tremella polysaccharides retain water very effectively, and some in vitro work suggests they hold water even better than hyaluronic acid because of their unique branching structure. They form viscous, gel-like solutions, which is the basis of tremella's hydrating reputation. They are also studied for antioxidant, anti-inflammatory and immune activity.

Dietary fibre and prebiotic compounds

Tremella contains soluble fibre studied for its potential to support gut bacteria and the intestinal barrier.

Triterpenoids, sterols and phenolics

What the research is exploring

An honest summary matters here, because the human evidence is thinner than the confident marketing suggests.

Skin and hydration

This is tremella's headline association. The water-binding capacity of its polysaccharides is well demonstrated in the lab, and a small number of early human studies have looked at skin hydration after oral or topical use. Those studies are limited and not yet confirmed by larger controlled trials, so the fair position is that the mechanism is genuinely interesting and the human evidence is early. Note that the traditional beauty reputation is cultural history, not clinical proof.

Antioxidant and anti-inflammatory activity

In cell and animal studies, tremella polysaccharides have been examined for scavenging free radicals and reducing markers of oxidative stress and inflammation (Zhu et al., 2015; Wang et al., 2019). Human data is limited.

Immune interaction

Preclinical work has looked at tremella polysaccharides and immune cells, including macrophage and natural killer cell activity and cytokine regulation (Zhu et al., 2015; Li et al., 2018). Human trials are scarce.

Gut and prebiotic effects

Tremella's soluble fibre and polysaccharides have been studied in animals for effects on gut bacteria and the intestinal barrier (Li et al., 2018). Human evidence is preliminary.

 

What the science does not show

This section is deliberate, because it is where mushroom marketing tends to overreach.

Tremella is not a proven treatment or preventive for any disease. There are no large, controlled human trials showing it treats or prevents cancer, and it should never be presented as an alternative to conventional treatment.

A lab property is not a clinical outcome. Polysaccharides binding water in a dish is a promising mechanism, not proof that eating tremella changes your skin.

Preclinical and animal findings do not automatically translate to humans. Most of tremella's evidence is at that early stage.

Holding this line reflects what the evidence actually supports.

 

What science still needs to prove

Standardisation. Tremella extracts vary widely in polysaccharide content, molecular weight and extraction method, which makes studies hard to compare.

Human trials. Most human studies are small and short. Larger randomised, placebo-controlled trials with clear endpoints are needed.

Bioavailability. How well tremella polysaccharides are absorbed and used by the body is not well established.

Oral versus topical. For the skin question specifically, more work is needed on whether eating tremella and applying it produce different effects.

Long-term safety. Long-term data and information on interactions with medications are limited.

Tremella has been eaten as food for centuries and is generally considered safe. The main caveats are practical: supplement purity varies, long-term safety data is limited, and there is a theoretical possibility of interactions with medications that affect immunity or blood sugar.
